Espresso Shortbread Cookies


• 1 cup unsalted butter, room temp
• ⅔ cup granulated sugar
• ⅓ cup powdered sugar (+ more for rolling)
• 1 tsp salt
• 2 egg yolks
• 2 tsp vanilla
• 2 Tbsp instant espresso
• 2 cups cake flour
• Nutella

This is something that took me a long time to justify buying but is worth it with these cookies.


*Cream butter, sugars, and salt until fluffy.
*Add egg yolks, espresso, and vanilla; mix until combined.
*Stir in flour just until incorporated.
*Roll dough into a 2-inch log, dust with powdered sugar, and chill overnight.
*Slice thin and bake at 350°F for 14 min. Cool completely.
*Sandwich with ~1½ tsp Nutella and chill to set.
